Bermuda Rum Swizzle
|
- 2 ounces dark rum
- 1 ounce lime juice
- 1 ounce Pinapple Juice
- 1 ounce orange juice
- 1/4 ounce falernum
|
|
|
Shake with ice.
Strain into a highball glass filled with ice.
Garnish with a slice of orange and a cherry.

Note: If you don't have falernum, you "can" substitute grenadine, although it isn't quite the same thing.

Bermuda Rum Swizzle
In the West Indies, the days are hot and long, and the drinks are tall and cold. Rum is the spirit of choice, and they usually rely on fresh squeezed juices, and plenty of ice. While I have yet to travel down amongst the islands, I can easily imagine what it would be like as I sit out on my porch on a hot summer evening sipping my Bermuda Rum Swizzle.
As part of my research into Falernum, this was one of the few cocktails that I could find which still required this ingredient. Many other Falernum based drinks have instead converted over to the more easily available Grenadine. While both are sweet, and have a slightly distinctive citric tang to them, Falernum also uses Ginger and some other spices to add some interesting undernotes to its flavor.
If at all possible, I highly recommend that you try to get ahold of Falernum. Here in the States, you can get it from Da Vinci Gourmet, and if you travel down into the Caribbeans I believe there are a couple of different companies that make it, including Gosling's Brothers Ltd makers of Black Seal Rum.
